Ingredients:
500 grams fresh river fish, approximately 4 pieces300 ml fresh water
banana leaves for wrapping
Seasoning:
8 pc onion
3 cm turmeric
4 pc garlic
3 pc kemiri
1 tsp salt
1/8 tsp white sugar
all this ingredient ground together until tender
Seasoning for inside wrapping (pepes seasoning):
10 pc onion
4 cm turmeric
4 pc garlic
5 pc kemiri
1 tsp salt
1/4 tsp white sugar
all this ingredient ground together until tender
Supplement:
5 salam leaves
5 cm galangale, chopped thin
20 stalk kemangi (basil) leaves
15 lime leaves, chopped thin
15 pc red pepper, unchopped
Directions:
- Boil ground seasoning, after boiling insert river fish until dried
- take fish and smear it with pepes seasoning
- add suplement ingredient, then wrap it with banana leaves
- pit the wrapping with palm leaf rib, or anything else to prevent it detached
- Steam for 3 hour.
Tips:
- to prevent fish shattered when boiled, take a notice to remove stomach content from the head. Pull up carefully, preserve its skin intact and don't rip it.
- there's many kind of river fish, i.e. mas fish, gurame, pomfret, nila, etc.
