This is an exotic form of satay, the popular culinary item from Indonesia. Differ from regular satay that using beef, sheep, or chicken meat, this Balinese satay recipe using prawn and fish as its main ingredient.
Ingredients:
300 g (10 oz) skinned boneless snapper fillet
300 g (10 oz) raw prawns, peeled
2 cups freshly grated coconut, or 1½ cups dessicated coconut, moistened
½ cup seafood spice paste (see recipe)
5 fragrant lime leaves, cut in hair-like shreds
1 tsp black peppercorns, finely crushed
2 tsp salt
3-5 green bird's eye chillies, very finely chopped
2 tsp coconut sugar
Lemon grass, cut in 15 cm (6 in) lengths, for satay skewers
Directions:
1. Mince fish fillet very finely with a chopper. Add all other ingredients and mix well.
2. Mould a heaped tablespoon full of this mixture around trimmed stalks of lemon grass (or a wooded skewer)and grill over coconut husks (or regular charcoal) until golden brown.
